The name Huixoc (pronounced wee-chok), which means “water spring”, is the name of the farm where this coffee comes from in northwestern Guatemala in the lush mountains of La Democracia. There are several water springs located on the farm that help provide adequate moisture during the dry season and have also provided the energy to run the coffee mill since 1940. The region’s rich soil, adequate rainfall and high altitude combine to create favorable conditions for producing excellent coffee.
Cupping Characteristics:
This coffee combines good acidity with a full body, lemony and mild citrus flavor leading to a chocolate, creamy walnut finish. The Huixoc is a consistent favorite around Humphreys Street Coffee Co.
